The Story

Still red Amarone della Valpolicella Classico, 15.5% ABV, produced by Zyme. Blend: 40% Corvina, 30% Corvinone, 15% Rondinella, 10% Oseleta, 5% Croatina, 2018 vintage. An Amarone born from the passion of Celestino Gaspari, founder of Zyme, and his philosophy of seeing wine as a leaven for the mind and the earth. The grapes are dried naturally for at least 3 months, pressed in January, and aged for 5 years in Slavonian oak barrels, followed by at least one year in the bottle. Notes of ripe cherry, morello cherry, and slightly dried plums, and spices. Intense ruby red, rich in glycerine and with garnet highlights as it ages. It opens with an enveloping flavor, confirming the olfactory notes and expanding toward jammy notes. With aging, it extends, expanding into delicate notes of pepper, licorice, and cocoa.
