The Trento 51, 151 Brut from the Moser winery is a classic method produced according to the Trento DOC regulations. The company's vineyards are located in a unique and evocative setting, immersed in the Maso Villa Warth. The winery is located in a historic village dating back to the 14th century, and the work is carried out according to the dictates of peasant life and traditional systems. The vineyards are located at an altitude of 650 meters between the hills of Trento and the Cembra Valley. The grape varieties used are Chardonnay and Pinot Noir. The average age of the vineyards is 15-25 years. The soils are predominantly calcareous. Good climatic conditions favor the cultivation of white grapes, as the optimal temperature ranges allow the grapes to ripen well and establish the right level of acidity, so important for white wines. The grapes are harvested manually and placed in crates to protect them from premature cracking. Upon arrival at the cellar, they are gently pressed at a strictly controlled temperature. During vinification, the free-run must is removed and fermented with selected yeasts in steel tanks. This produces the base wine, which will then age in oak barrels and oak and acacia barriques until the malolactic fermentation is complete in spring. After this final step, it is time for the tirage process for the secondary fermentation. The wine is then inoculated with selected yeasts and bottled. The wine will remain on the lees for 30 months. This will be followed by disgorging and dosing to obtain the Brut del Trento 51,151 typology.
