The Story

The Savart Champagne L'Ouverture Brut from Maison Frédéric Savart is an AOC champagne produced in two villages classified as Premier Cru: Écueil and Villieurs-aux-Noeuds. We are in the Marne department, in the heart of the Champagne terroir, in a landscape where the Montagne de Reims protect the vineyards from excessive cold. The climate of the small village of Écueil is influenced by both continental and oceanic influences. Harsh winters and spring frosts alternate with dry, sunny summers; the combination of these microclimates gives the area's wines a high acidity level. The soil features a characteristic chalky layer, called craie, which, in addition to giving the champagne a distinctive mineral note, retains moisture to release it during drier periods. Savart Champagne L'Ouverture Brut is the result of a very specific philosophy: the best grapes for the best wines. The Pinot Noir, the absolute star of this champagne, is grown without the aid of machinery and in full respect of an ecosystem where only Nature dictates the ripening times of the vines and gives the final product a flavor and structure that are never codified but always different. The manual harvest is the prelude to a vinification that begins with a unique blend. Savart Champagne L'Ouverture Brut is in fact born from a cuvée made with 85% grapes from the first pressing and 15% from first cut grapes, or second pressing.
